Season 01 - 2023
Anema was created in 2023 by Antoine and Maxence to turn the terrasse of Hotel Saint-Julien in Biarritz into an energetic summer destination. 
Season 03 - 2025
For Season 03, we introduced the chef and curated the wine list.
Léa Etchegoyen, one of the most creative emerging voices from the Basque region, joins forces with Louise Boiron for a 3-month residency.
Their cuisine draws from the best of the local terroir, shaped by a modern hand.
The all-natural wine list features French winemakers who share the same free-spirited approach to their land.
Always terroir forward.
